Cookie Pops!

Hey guys! So I made a bouquet of cookie pops the other day and had to share the picture with you! Cookie pops are so fun, let's face it...food on a stick is just way more fun to eat! I found the cookie recipe and some great info on how to actually put them together from the wonderful and oh, so talented Sweetapolita! I sadly didn't take any pictures of the process as I wasn't planning on turning it into a post, but it just worked out so well I had to share so I borrowed some of her images to give you the idea of the process! I created my own icing however which has been getting great reviews! It's a simple coconut-lemon icing! I made three very small batches and made them each a different color but the basic recipe for a small batch of it is as follows (double if you are only making one color): 

Coconut - Lemon Icing!
1 cup icing sugar
2 teaspoons lemon juice
1/4-1/2 teaspoon lemon zest (to your taste)
1-2 teaspoons original coconut creamer (I think vanilla flavor would work really well too)!

My recipes are always changing and I keep adding until I get the taste I like, so start with the smaller measure and just keep adding until you get the taste and texture of the icing to where you personally would like it! Hope you like them! Enjoy!
