Drool Worthy Recipes: Part 2!

Hey guys! Happy weekend! Hope you all have some great plans! Not much going on here...just spending lots of time in the garden followed by lots of cooking and baking in the kitchen! That's partially why I'm writing this post...I have so many vegetables that are ready to be picked in my garden that I've been on the hunt for recipes to use them up so here are a couple that I've either made or have been holding onto waiting to use! Hope there are a couple in here that you like enough to add to your recipe collection! Enjoy!

 Corn Fritters with Spicy Zucchini Salsa:

I actually made a vegan version of this by substituting a mixture of coconut milk and unsweetened almond milk and tempeh "bacon" instead of the bacon and added some cumin! Amazing!
